

F14 Maikon no Kohara
Maikon is a salted kelp-style fermented food made by cooking Shinkombu from Southern Hokkaido in Hokkaido using an open fire preparation method and adding natural yeast such as akebi petals to ferment. We also have crepes with yuzu, which won the Minister of Agriculture, Forestry and Fisheries Prize, the highest food award, and products using seasonal ingredients such as matsutake mushrooms and eels.
